Pulled Jackfruit Tacos with Avocado Lime Crema and Strawberry Salsa

Tacos are definitely up there in terms of summertime fare.

Lackingย a little taco inspiration though? Say hello to your new favourite: pulled jackfruit tacos ๐Ÿ™‚

I was feeling pretty inspired over the weekend and decided to finally give pulled jackfruit a whirl as I’d seen this featured in sloppy joe and curry recipes (stay tuned ๐Ÿ˜‰ ).

Before we delve into this recipe, a word about jackfruit, shall we?

Jackfruit is tearing up the plant-based world as an awesome meat substitute – its mouthfeel is oh so similar to pulled pork or chicken. This fruit often grows to be humongo (weighing in at 20 pounds – basically three times my birth weight haha! but also weighing as much as 100 pounds – makingย it the largest tree-borne fruit). It usually comes from Southeast Asia and eastern Africa and is a source of vitamin A, antioxidants, B-complex vitamins and vitamin C, amongst other nutrients. Shut up and take my money!! ๐Ÿ™‚

Ready? Here’s the recipe:

Pulled Jackfruit Tacos with Strawberry Salsa and Avocado Lime Crema

Ingredients:

For the pulled jackfruit:

  • 2 cans of jackfruit (in brine – avoid the type that’s bathing in syrup – you can find this in health food stores and in many Asian supermarkets)
  • 2 yellow onions, chopped
  • 4 garlic cloves
  • 1 tbsp. paprika
  • 1 tbsp. chili powder
  • 2 tbsp. tamari
  • 4 tsp. sweetener (agave, maple syrup or sugar)
  • 2 cups vegetable broth
  • 2 chipotle peppers in adobo sauce
  • 2 tbsp. vegetable oil (olive or coconut)
  • 1 tsp. liquid smoke (optional)

For the strawberry salsa:

  • 2 cups strawberries, chopped into small pieces
  • 1 large red onion, also chopped
  • 1 jalapeรฑo pepper (use 2 if you’re very brave – and no that’s not a dare ๐Ÿ˜‰ ), seeds removed and finely chopped
  • 1 bunch coriander, chopped
  • 1 lime, juiced
  • Salt and pepper, to taste

For the avocado lime crema:

  • 1 cup cashews
  • 1 avocado
  • 6 tbsp. filtered water
  • 2 tsp. apple cider vinegar
  • 2 limes, juiced
  • 1/2 tsp. salt

To hold the whole shebangs together:

  • 8 soft-shell corn tortillas

For the pulled jackfruit (better than the real deal (aka pulled pork)):

  1. Start off with the pulled jackfruit as this takes the most time but doesn’t require continued attention.
  2. Firstly, drain the jackfruit pieces and add them to a large pot. To this bowl, add your tamari, garlic cloves, chopped yellow onion, liquid smoke, chopped chipotle peppers, paprika, chili powder and water. Allow to marinate for a couple hours at least.
  3. Once your pulled jackfruit has marinated sufficiently, place your pot on the stove andย bring to a boil.
  4. Reduce heat to medium and cook for 40 minutes, mashing about halfway through. Your pulled jackfruit is ready when no vegetable broth remains.

For the strawberry salsa:

  1. Combine all ingredients in a bowl and stir. You’re done!

For the avocado lime crema:

  1. Add all ingredients to a food processor and blend until smooth and creamy! Add minimal amounts of water at a time if your sauce is too thick.

Assembling:

  1. Dress your tacos to the nines and mindfully enjoy ๐Ÿ™‚
