Got a hankering for popcorn with a twist?
Look no further!
I’ve always been a die hard popcorn fan. IMO, it’s the king of snack foods. It’s crunchy and airy and fluffy and satisfying. Plus, it’s the ultimate companion during movie nights. Contrary to popular belief, popcorn is and can be healthy. That is, when it’s not drenched in butter and salt and preservatives or even that “goop” pretending to be butter (I see right through you, goop!).
First off, popcorn is a whole grain, which means fibre galore. Popcorn is also a less processed snack than granola bars or crackers, which, although sometimes made with whole grains, are processed. Popped corn happens to be a source of healthy antioxidants (namely polyphenols, the type of antioxidant also found in chocolate and red wine), containing higher amounts of antioxidants than some fruits and vegetables, according to studies conducted in 2012.
For this trail mix (or lazy mix 😉 ), I’ve decided to throw some dark chocolate chips into the mix. These provide blood-pressure-lowering flavonols and the aforementioned polyphenols. I’ve also invited dried fruit to provide some fibre and natural sweetness and some nuts to provide a protein, fibre and healthy fat boost. Wow wow wee wow!
Popcorn, Dark Chocolate, Fruit & Nut Trail Mix
- Air-popped popcorn
- Dried fruit without any added sugar or sulphites (I suggest chopped apricots, cranberries, blueberries, chopped prunes, etc.)
- Dark chocolate chips
- Nuts (almonds, walnuts, Brazil nuts, peanuts, etc.)
- Combine all ingredients in desired proportions.
- Hit the trail (or the couch – balance is key 😉 )!
Such a unique and different snack! We’re not in Kansas anymore! 😉
