Sunday (or Any Day of the Week) Sundae

Bono called it: “sundae bloody sundae”.

Sundaes aren’t just for dessert anymore though, they’re now for any time of the day, maybe even breakfast!

Today’s energizing sundae recipe features chia pudding, which I often struggle with as the presentation thereof often ends up looking less than appetizing. I do think that this time around, my chia pudding recipe looks like a masterpiece. Hip hip hurrah!

This green smoothie though!

Primero, make your chia pudding by mixing chia seeds and soy beverage (if you’ve never had chia pudding, know that it has a texture similar to tapioca pudding – nice and gooey):

  • 2 tbsp. chia seeds
  • 1 cup soy beverage (or almond or rice beverage)

Mix these two ingredients and let sit for 10-15 minutes.

Segundo, for the green smoothie, fetch the following ingredients from the pantry:

  • 1 cup soy beverage (or almond or rice beverage)
  • 3/4 cup spinach
  • 1/4 cup frozen mango, pineapple or berries
  • 1 ripe banana

Instruction:

Blend these ingredients together in a blender.

Tercera, place some chia pudding at the bottom of a sundae glass, then add some green smoothie, then add more chia pudding, then add more green smoothie. Layer the two mixtures as you please.

Top with fruits for decoration (I used forbidden fruits/pomegranate).

Enjoy any day of the week, really…
