Don’t you just love guacamole? It’s a dinner party favourite and always quick to vanish at a potluck. I will always remember telling a friend of mine how good my guacamole was. I was most definitely tooting my guacamole`s horn. His remark “Oh so you mean you’re good at smashing avocadoes together?”. Haha! Basically, yup. Pretty much. That’s another reason to love guac – it`s so darn simple to whip together. On another note, don’t you just adore pomegranates? These tart but sweet little rubies are filled with yummy antioxidants and brighten up any dish. Today, I chose to add a fruity kick to my classic guacamole with pomegranate seeds, which are a beauteous and flashy bright red contrast against the guacamole’s cilantro-flecked pastel green.
4 ripe organic avocadoes
1 cup chopped red onion
1/2 cup chopped cilantro
2 tbsp. extra virgin olive oil
1 handful of organic cherry tomatoes
1/4 cup of fresh squeezed lemon or lime juice
Seeds of 1 pomegranate (around 3/4 cup)
1. Place all ingredients except the pomegranate seeds into a food processor and pulse until desired consistency is obtained. Fold in the pomegranate seeds. If you do not have a food processor or if you prefer a chunkier guac, simply mash together all ingredients using a fork and knife.
2. Serve with organic tortilla chips.
