This pastel green minty and frothy concoction is great as a coffee substitute or even in lieu of a dessert. If you haven’t heard of matcha, let me introduce you two (Haaaaaave you met matcha/Ted? 🙂 ). It is a well-known fact that green tea is loaded with antioxidants hence healthy for you. Enter matcha. Matcha is a type of green tea that has more antioxidants than other green teas because it is in the form of powdered tea leaves. Matcha is obtained by grinding whole green tea leaves making it such that when you have matcha, you are consuming entire tea leaves as opposed to just infusing some of tea’s beneficial compounds into the hot water.
1 cup non-dairy milk, vanilla, unsweetened
2 tsp matcha green tea powder
1-3 tsp honey (or to taste)
1/4 tsp. of peppermint extract
1/4 teaspoon dried mint
1. Heat the unsweetened soy or almond milk in a pan with the matcha, honey, peppermint extract, dried mint, stirring often. Bring to a boil.
2. Use a fork or a bamboo matcha whisk to get rid of clumps.
3. Serve. Don’t burn your taste buds – let cool a bit. Bottoms up. 🙂
